A mellow aroma of sweet ribena fruit alongside soft tobacco and some cedary oak with a touch of that 'Clare Valley' menthol / eucalyptus. |
PALATE |
Quite tight in youth, the palate is quite chewy with firm yet integrated tannins to the fore. The wine opens up with tangy, blackberry fruit, subtle oak and some spicy, savoury notes. This is a medium weight cabernet – elegantly structured and with great potential to flesh out with a little more time in the bottle. |
GENERAL |
Minimum 18 months oak maturation has allowed this wine time to integrate yet knowing the sometimes 'fierce' nature of our cabernet tannins, a further 6 months in bottle prior to release has also given the wine extra time to develop. No need to hurry this baby though - easily one to put away for 4-6 years more! |
SERVE |
This wine loves food; anything from a sharp, full-flavoured cheddar to roast saltbush lamb. |
