BOUQUET

The nose offers a complex and inviting blend of soft cedar oak, leather and sweeter black fruits with dark plum.

PALATE

Densely layered flavours of gently sweet blackberry fruits with quite savoury/earthy notes. This is a medium weight wine of great complexity and structure held together by firm, mouth-coating tannins. A regional menthol lift shows on the finish.

GENERAL

Our 2009 Cabernet Sauvignon has spent in excess of 18 months maturing in a careful selection of old and new, predominantly French, oak. This time in barrel gives the opportunity for the naturally pronounced tannins of the Cabernet grapes to soften and integrate.

SERVE

Pair this complex wine with old fashioned spiced Italian sausages or slow roasted saltbush lamb.
