PALATE |
Densely layered flavours of gently sweet blackberry fruits with quite savoury/earthy notes. This is a medium weight wine of great complexity and structure held together by firm, mouth-coating tannins. A regional menthol lift shows on the finish. |
GENERAL |
Our 2009 Cabernet Sauvignon has spent in excess of 18 months maturing in a careful selection of old and new, predominantly French, oak. This time in barrel gives the opportunity for the naturally pronounced tannins of the Cabernet grapes to soften and integrate. |
SERVE |
Pair this complex wine with old fashioned spiced Italian sausages or slow roasted saltbush lamb. |
