BOUQUET |
A very youthful, lifted bouquet dominated by sweet spicy oak but with the promise of full, fruit driven aromatics to open up in time. Showing, in youth, as spiced plum, violets and tell-tale Viognier apricot. |
PALATE |
The ripeness of the 2008 season is apparent in the mouth - all ripe juicy berries and soft mouthfeel with just a touch of warming alcohol on the finish. Clean, spiced oak flavours linger and the fruit flavours are pulled into line by balanced acid. |
GENERAL |
Typically we make this wine in the vineyard by co-harvesting and fermenting but the extraordinary conditions of the 2008 vintage saw our Viognier and Shiraz ripen at significantly different times, preventing this. Instead, our Viognier was picked 10 days after the Shiraz, fermented separately in oak and left to mature on lees for 2 months prior to blending. |
SERVE |
The natural acid freshness of this wine makes it a great option to pair with full flavoured cheeses - I also like it with 'herby' salt bush lamb souvlaki. |
