BOUQUET - An enticing wine that greets you with violets, squashed blackcurrants with an alluring hint of olive and licorice that intensifies with every swirl.
PALATE - Elegance, subtle integration and balance of fruit with oak are all attributes of this wine. With dark fruit flavours of blood plums and blackcurrants and a depth of flavour from oak integration that lifts rather than overpowers, this vintage typifies Clare Valley and all it has to offer.
GENERAL - Each component used in the blending of the Bootroom creates a Shiraz that exemplifies certain characteristics of the Clare Valley. From Leasingham to just north of the Clare Valley township, we had access to parcels that defined the sub-regions of Clare and work harmoniously to create a full, rich and balanced Shiraz. Combined with careful oak selection with 30% New French Oak and 70% older French and American barrels, this Shiraz will continue to give for the next 8-10 years.
SERVE WITH - Fillet Mignon wrapped in smoky bacon, topped with an earthy mushroom sauce, served on a bed of parsnip and sweet potato puree.
