COLOUR - Deep crimson, bright and youthful but with black depths (like my heart).
BOUQUET - Mint, menthol and blackcurrant all wrapped up in fancy pants subtle French oak – ooh la la! The use of first and second fill sexy French oak barrels may make the bean counters cringe but pays dividends in the glass.
PALATE - Soft, fleshy and full with embracing lingering tannins this is a wine of weight and substance but with balance as it’s middle name.
Classic Clare Valley Cabernet at it’s best - very early hints of WOW reflect just how good the 2018 vintage was. Consider flavours of Christmas cake, cassia bark and soft voluptuous berries melded with subtle hint of cedar from high end oak. A wine that is in its infancy but will develop amazing secondary characters.
GENERAL - A site specific wine, drawn from grower blocks where the vines are treated with the respect deserving of their status as elder statesmen of the region. Dry grown parcels, left to take their sweet time on the vine, from a wonderfully warm but consistent season contribute that intensity in the glass.
We then allow these parcels two years in barrel affording the wines the perfect amount of time in oak to really come into their own, tannins become velvety and reinforce the wine’s balance.
SERVE WITH - A finely crafted wine like this deserves a classic – lamb is where it’s at for this crew. Roasted simply with a side of homemade plum sauce or black olive tapenade and buttered baby potatoes.
Easily a cellaring proposition, we expect to see our bewitching minx improve over the next 5-15 years.
