Bouquet - The aromatics are lifted and appealing; fresh cranberries with green olives and lots of those pretty Sangi’ light berry fruits.
Palate - A wonderfully full flavoured and balanced medium weight wine showing elegant, velvety tannins in the mouth with hints of dry and dusty earth. There is a deceptive succulence to this wine, with a mouth coating structure and lingering persistence on the palate. We note an almost strawberry cream element to the fruit profile and licks of fresh Italian leather.
General - This is all about artisan, small batch winemaking. Hand plunged in one tonne open vats with minimal intervention and basket pressed to oak. This ensures that all of the primary fruit flavour from the vineyard is captured and drives what you taste in the mouth.
Older oak only is used over a 15 month maturation to preserve and enhance the natural fruit flavours and characteristics of the variety.
Serve With - Roast pork with fresh fennel salad.
Vineyard - Located north of Auburn at the mouth of the valley the slightly warmer climate delivers fruit with structure and succulence.
