Bouquet - A Shiraz with all the strappings; Leather, spice, white pepper, earth, forest fruits and fleeting hints of rosewater…. Deliciously aromatic.
Palate - A lateral shiraz with depth and persistence, morello cherry and boysenberry blend seamlessly into the fine tannins that gently grip, then let go and surrender to the juicy depths of this wildly enjoyable Clare Valley Shiraz.
General - The 2017 Dark Side of the Moon oozes charisma, exemplifying Clare Valley Shiraz. Each of the parcels used from within the Clare Valley define the sub-regions of Clare and work harmoniously to show a shiraz that has all of its ducks in a row! Combined with careful oak selection with 20% New French Oak and 80% older French and American barrels, this wine will continue to give for the next 8-10 years (if you can wait that long!).
Serve With - The elegance and delicateness of this Dark Side of The Moon would pair decadently with a melt in the mouth steak. So we zhooshed it up and decided what our perfect steak match with this wine would look like; Butter basted Rib Eye steak with Paris potatoes.
