Bouquet - Delicious white flesh peach entwined with smashed lemongrass characters that are entwined with basil flowers and hints of grapefruit.
Palate - Long and rich, this wine is pure of character to the fruit from our Watervale vineyard. This wine has a succulent, creamy weight with mandarin zest offering this a tight drying finish. The hint of oak works to give this wine a textured and creamy succulence.
General - A 2.5 tonne parcel of dry-grown, 1960’s Chardonnay from our Estate Watervale vineyard allows us to make this wine with high attention to detail. Harvested at optimal ripeness and at the height of natural acid retention, the fruit was chilled prior to crushing with minimal skin contact then fermented, with a small percentage on new French oak. Some extended lees contact builds another layer and allows the wine to meld together. Refined and pure, our chardonnay is Watervale at its best.
Serve With - Woodfired prosciutto and bocconcini pizza.
