Bouquet - Fresh, lively and youthful – the bouquet of this wine is all lifted kiwi fruit, fresh herbs and passionfruit.
Palate - Clean, light and balanced. This Sauvignon Blanc is made in a style that is delicate in its fruit flavours, mouth-watering in its acid balance and dry to keep the weight of the wine in check. Fresh and dry with a hint of grassy notes that make this wine a joy to savour.
General - Acknowledging that the the Clare Valley is a tad warm for classic Sauvignon Blanc production, led us to secure ongoing supply of quality cool climate fruit from the Limestone Coast region of South Australia. Time on skins prior to pressing allows us to extract maximum flavour. Minimal intervention from this point, has produced a wine of bright natural acidity, forward and appealing fruit flavours.
Serve With - The generosity of this ‘Savvy’ makes it a great drinking wine (with or without food) however we do love the idea of this one with simply prepared French style seafood; think grilled fish fillets with caper and herb butter or steamed mussels with garlic and white wine. Enjoy this wine young and fresh, within 1-2 years.
